Input
1 ½ lb. Cod fillet, skinned
¾ pint milk
2oz. Butter
1 small onion, peeled and chopped
1oz. Corn flour
1 x 11 oz. can of sweet corn
Salt and freshly ground black pepper
2 tablespoon single cream
8oz. frozen puff pastry, thawed
Processes
Poach the fish in the milk for 10 minutes,
Heat the butter, onion and celery and fry for 5 minutes.
Stir in the flour and gradually the milk.
Stir in the undrained sweet corn, fish and seasoning.
Add the cream and transfer into a ovenproof pie dish.
Roll out the pastry and seal the edges of the pie. Use the trimmings to decorate.
Suggested Modifications
Instead of sweet corn kidney beans can be added. These are high in protein. The fish can be changed to a meat or a Soya, Quorn product. The onion and celery can also be changed to either parsnip, mushroom, carrot and tomato. This is a good recipe because many aspects can be changed.

Chicken with peaches à I’indienne
Input
2oz. Butter
1 tablespoon Corn oil
4 chicken portions
2 onions, peeled and sliced
1 garlic clove, crushed
1oz. flour
1 tablespoon Curry powder
½ teaspoon ground ginger
½ teaspoon ground cinnamon
½ pint chicken stock
Salt
1 tablespoon mango chutney
2 fresh peaches, skinned and stoned, or 4 canned peach halves, drained
Juice of ½ a lemon
Processes
Heat the butter and oil. Add the chicken joints and fry.
Add the onions and garlic, fry until tender.
Sprinkle in the flour, curry powder, ginger and cinnamon. Cook stirring.
Stir in the chicken stock and bring to the boil.
When the sauce is thick, season with Salt add the chutney.
Mix everything in together and cook for 25 minutes.
Suggested Modifications
The chicken can be changed to a Soya product.
The peaches can be changed for different fruit like pineapple or pears.

Pasta Mix Up
Input
½ Red pepper, sliced
½ Yellow pepper, sliced
½ Green pepper, sliced
1 small onion, sliced
5 rashes of Bacon
Soy sauce
1 x 11oz. can of sweet corn
Amount of Fusilli pasta to person desire
Processes
Put the pasta on to cook.
Fry the peppers and onion with soy sauce.
Add the diced bacon and sweet corn.
Cook until all tender and brown in colour from the Soy sauce.
Mix everything together and serve to your desire.
Suggested Modifications
This recipe can be changed so easily. Different vegetables can be used and a different type of pasta can be applied.

Chicken Pie
Input
1 Chicken, 3 lb.
Court Bouillon
2 Carrots, peeled and chopped
1 Onion, peeled and sliced
1 celery stalk, chopped
1 Bay leaf
6 Peppercorns
2 oz. Butter
1 small onion, peeled and sliced
2 Carrots , peeled and sliced
4 oz. mushrooms, sliced
1 teaspoon dried mixed herbs
2 oz. flour
¼ pint creamy milk
Salt and Pepper
12 oz. frozen short crust pastry, thawed
Processes
Put the chicken in a large saucepan with the Court Bouillon ingredients with enough cold water to cover everything. Cook until tender.
Drain the chicken and keep the sauce. Cut the chicken into bite size portions.
Melt the butter add the onion and carrots and fry. Add the mushrooms and herbs.
Sprinkle in the flour. Gradually stir in the sauce. Season and bring to the boil.
Put in a pie dish.
Roll out the pastry and decorate with trimmings.
Suggested Modifications
The vegetables can be changed to suit everyone’s personal favourite taste.

Lamb Korma
Input
Part A
2 lb Leg of Lamb boned, cut into 1 inch pieces
1 Medium sized onion peeled and shredded
3 tablespoon Cooking oil
1½ teaspoon Garlic paste
1½ teaspoon Ginger paste
4 Bay leaves
4 Green cardamom seeds
2 Cinnamon sticks
½ teaspoon Salt
½lb Butter
½ Pint Water
Part B
½ Pint fresh cream
1 Cup fresh milk
1 tablespoon Coconut flour
1 teaspoon Almond powder
2 teaspoon Sugar
Pinch of turmeric powder
3 large onions peeled and chopped
Processes
Mix all the ingredients together from part A in a boiling pot or heavy based saucepan, start cooking over a high flame covered, when the ingredients begin to boil stir and turn the flame to a medium heat and cover and continue to cook for 35 minutes.
Stir the ingredients frequently watching they don't stick to the bottom of the pan.
Now remove the lid and pour in all the ingredients from part B stir and mix well bring to the boil and keep stirring, turn the heat to low, cover the pot with its lid and continue to cook for another 30 minutes, stirring occasionally.
Remove the pot from the heat and allow to rest for ten minutes prior to serving

The lamb can be changed to beef and many of the ingredients can also be changed to your personal taste.
